Quickie recipe post that some of you requested... roast pepper and tomato soup...
Zero PP if you leave out the creme fraiche, 1PP if you keep it in but you'll get 4 - 6 servings from this recipe and it freezes well...
It's easy peasy!
Pack of passata
Tin of chopped tomatoes
Tomato Puree
2 Peppers
Onion
Baby tomatoes
1/2 tbsp of creme fraiche
Spray oil
HOW?
Spray your roasting tray and add chopped peppers, onion and your baby tomatoes...
Season and if you like add some basil...
Roast till the veg are all soft....
In a saucepan, combine the passata, puree and tinned tomatoes - tip - try the ones in the Lidl with added herbs!
Season and slowly bring to the boil....
When its heated through, stir in your veg and its ready, I leave the veggie whole but you can take half out and blitz it then add it back to the pot to make it smoother...
The creme fraiche is optional I find it makes the soup creamier...
